Rooibos (Aspalathus linearis) grows exclusively in the rugged, dry Cederberg Mountains on South Africa’s west coast.
The tea is produced in a manner similar to traditional oolong or black tea: the needle-like leaves are bruised and oxidised, causing them to change from green to a rich amber-red colour. Unlike traditional tea, however, rooibos is naturally caffeine-free and low in tannins.
The resulting liquor is bright, rich, and smooth, with a naturally sweet flavour featuring notes of orange and a delicate hint of clove.
Brewing Guide:
Use 1–2 teaspoons per cup. Infuse with freshly boiled water at 95–100°C for 5–7 minutes to allow the full flavour and rich colour to develop. Best enjoyed without milk, although a splash of milk can create a smooth, creamy cup.
Cold Brew Guide:
Use 1–2 teaspoons per 350ml of cold water. Infuse in the refrigerator for 6–8 hours, or overnight for a smooth, naturally sweet Cold Brew . Strain before serving over ice.
